Vegetarian Black Bean Soup

A Delicious Soup Made with Our Chili Seasoning Blend

This is a simple soup recipe made with canned beans and a few additional ingredients. Pair with cornbread, crusty sourdough or tortilla chips for a tasty meal.

Ingredients:

  • 4 cans black beans with no salt added (one of them blended)

  • 1 32 oz carton veggie broth

  • 1 10 oz can tomatoes with green chiles

  • 1 cup grated carrots

  • 1 tsp cilantro paste

  • 2 tsp tomato paste

  • 2 chipotle peppers in adobo sauce

  • 1/4 cup roasted verde salsa or other green salsa

  • 2 TBS Charley Brown's Backburner Chili seasoning blend

Preparation:

  1. Blend one of the cans of beans along with the chipotle peppers

  2. Add blended beans, the remaining beans, and all other ingredients to a large pot, crockpot or instant pot

  3. Depending on your cooking method, cook all day or in the instant pot, use the soup/chili mode for soup in about 30 minutes.

  4. Enjoy with bread, crackers, chips or cornbread and a salad

Recommended Additions:

  • Chicken

  • Beef

  • Onions

  • Corn

  • Top with cheese & Sour cream or Greek Yogurt
