Turkey and Black Bean Tacos

Easy Weeknight Dinner

These tacos are easy to make and very versatile. Add what you like and make them your own.

Ingredients:

  • 8 ounces ground turkey

  • 1 14 ounce can black beans, drained

  • 1-2 tsp Backburner Chili Seasoning

  • 8 corn tortillas

  • 8 TBS Red salsa or taco sauce

  • 8 TBS Green Salsa

  • 4 ounces Pepper Jack cheese

  • Spray oil

Preparation:

  1. Combine the ground turkey, Backburner Chili seasoning, and black beans and cook thoroughly.

  2. Place 2 TBS of red salsa or taco sauce in a saute pan after spraying generously with oil

  3. Add 2 corn tortillas to the pan, spreading the salsa onto the bottom of each one.

  4. Top tortillas with 1 ounce of cheese, divided evenly between the tortillas.

  5. Add 1/4 of the turkey and bean mixture to the tortillas.

  6. Cook until the cheese melts and the red sauce begins to caramelize the bottom of the tortillas.

  7. Top with green salsa and serve

  8. Repeat for 3 more servings

Variations and Additions:

  • Substitute ground beef, chorizo, shrimp, shredded chicken, or portabella mushrooms

  • Substitute pinto beans

  • Substitute cheddar cheese or a Mexican blend of cheeses

  • Add white onions to the turkey and bean mixture

  • Top with lettuce, tomato, onions, jalapenos, pico de gallo, avocado, sprouts, more cheese
